The study developed a ready-to-drink Phuket Oh-Aew jelly with significantly lower energy—only 1.92 kcal per 100 g compared to 57.2 kcal in the local product. The product remained safe and stable for over 30 days at 0–5°C with no pathogenic microorganisms detected.
